• Monitor regular production standards to ensure the highest level of quality • Monitor all aspects of hotel food cost control • Participate in the drafting of ideas and conceptual menus for all special events and functions while encouraging all employees to put forward their ideas and make use of them where practicable. • Ensure that HACCP standards are implemented and appropriate hygiene standards are followed as per the municipality's requirements at all times • Ensure consistency of on-the-job training session for culinary colleagues and promote health and safety
