Executive Chef
Job Summary
We are seeking an exceptional Executive Chef to lead the culinary vision pre-opening delivery and ongoing operational excellence of NH Collection Sydneys Spanish fine dining restaurant and SEEN Rooftop Bar.
This is a rare opportunity to shape a world-class dining destination from the ground up. As Executive Chef you will define the culinary identity build and inspire a high-performance brigade and position the venue as one of Australias most exciting Spanish gastronomic experiences.
Reporting directly to the General Manager you will play a critical leadership role in launching and establishing a landmark hospitality offering within the NH Collection portfolio.
Key Responsibilities
- Take full ownership of menu engineering with complete creative control to design develop and evolve the menu from inception.
- Define the culinary narrative including dish creation tastings costings and presentation standards.
- Oversee all food offerings across the Spanish fine dining restaurant SEEN Rooftop Bar and inroom dining.
- Drive all culinary preopening activities including kitchen design input equipment commissioning and HACCP implementation.
- Design kitchen workflows SOPs and operational frameworks to support a premium dining experience.
- Recruit train and lead a highperforming kitchen brigade.
- Deliver consistent fivestar culinary execution across all services.
- Create signature dishes that define the venue and elevate the guest experience.
- Manage food and labour costs with strong commercial discipline.
- Implement bestinclass inventory control portioning and waste management practices.
- Build and manage strategic supplier partnerships with a focus on premium Spanish and local Australian produce.
- Collaborate with Marketing to support culinary storytelling brand positioning and launch activity.
- Represent the venue through media PR and industry engagements.
- Contribute to establishing the restaurant as a mustvisit dining destination in Sydney.
- Ensure full compliance with food safety hygiene and regulatory requirements.
- Implement and uphold NH Collection operational standards and governance processes.
Qualifications :
Experience & Background
- Accomplished Executive Chef or senior culinary leader ready to lead a flagship opening.
- Strong experience in highend Spanish or Mediterranean dining including Michelinstarred or equivalent environments.
- Proven capability delivering preopenings or major concept launches.
- Confident creative culinary leader with strong commercial and cost discipline.
- Inspirational people leader with a track record of building highperforming teams.
- Deep commitment to authenticity premium ingredients and elevated guest experiences.
