Role Statement.
We are currently recruiting a Commi Chef (Garde Manger) on behalf of our client a reputable high-end hotel based in Nairobi. The successful candidate will be responsible for all cold kitchen operations ensuring high-quality preparation presentation and hygiene standards.
Key Responsibilities.
- Prepare and present all cold dishes including salads appetizers canapés dressings and cold buffet items.
Ensure all cold kitchen items meet the hotels quality and presentation standards.
Maintain high levels of cleanliness and hygiene in the cold kitchen section.
Properly store label and rotate ingredients in accordance with food safety guidelines.
Assist in menu planning and development for cold kitchen offerings.
Coordinate with other kitchen departments to ensure smooth operation and timely service.
Monitor inventory levels and communicate requisitions to the Head Chef.
Maintain cost control and minimize wastage.
Requirements
Diploma/Certificate in Culinary Arts or Food Production.
Minimum 12 years experience as a Garde Manger or in a similar cold kitchen role.
Strong knowledge of cold food preparation plating techniques and food safety standards.
Excellent attention to detail and presentation skills.
Ability to work under pressure in a fast-paced environment.
A positive attitude professionalism and willingness to learn.

Required Skills:
Proven experience in marketing and selling luxury travel packages with a strong network in the travel industry. 3 to 5 years of experience in a similar role within the hospitality space or high-end tours and travel companies. Expertise in digital marketing brand management and media outreach. Strong negotiation presentation and relationship-building skills.
Required Education:
Bachelors degree in Marketing Business Hospitality or a related field.
