Your Impact
Assist culinary leadership with the daily operations of the kitchen and provide professional support and guidance to kitchen personnel. Ensures that all recipes food preparations and presentations meet specifications and commitment to quality. Maintains a safe orderly and sanitized kitchen. Demonstrates this by example using proper food-handling techniques.
What you will do
- Verify kitchen staff follow all recipes and portion servings correctly.
- Observe all food stations to eliminate waste and ensure the best and freshest products possible.
- Ensure the staff maintains a clean and sanitary workstation using the clean as you go method.
- Supervise and train staff engaged in preparing cooking and serving food.
- Ensure all stations remain stocked before and during meal periods.
- Produce daily production sheets and records leftovers.
- Plan and creates requisitions for ordering; examines food products for quality and quantity.
- Maintain HACCP standard operating procedures; keeps kitchen and storage areas clean and organized.
- Perform knife skills and cooking methods on all ingredients as required.
- Label prepared items with item name prep date use by date and preparer initials.
- Assign and review work of direct reports if assigned.
- Assume responsibility for the kitchen in the absence of culinary leadership.
- Other duties as assigned.
Qualifications
- High School Diploma/GED. 3-5 years experience in a high-volume food service setting.
- ServSafe Certification and state food handler certification (if applicable) required.
- Food service safety standards and operations.
- Ability to work all classifications and kitchen stations.
Physical and Sensory Requirements
- Ability to walk or stand for extended periods during shifts.
- Use of hands for handling equipment operation and food preparation.
- Must be able to lift up to 40 pounds frequently.
- Regular exposure to heat cold humidity and kitchen equipment.
- Requires visual acuity for food presentation and safety; ability to smell and taste food items.
- May require bending stooping or climbing during kitchen activities.
