Summary: The Production Manager will lead and optimize daily food production operations within a high-volume central kitchen serving over 100 branches. Responsibilities:
Supervise and manage daily food production activities to meet branch demands
Ensure all production schedules are completed on time and with consistent quality
Maintain strict adherence to food safety hygiene and HACCP compliance standards
Lead mentor and support kitchen production staff in daily operations
Coordinate with warehouse purchasing and logistics teams to ensure seamless workflow
Monitor inventory usage and implement strategies to reduce waste
Support cost-control initiatives and drive operational efficiency improvements
Prepare production reports and track daily performance metrics
Ensure proper maintenance of kitchen equipment and production areas
Identify and implement process improvements to enhance productivity and output

Minimum 5 years of experience in food production central kitchen catering QSR or restaurant chain operations
Proven knowledge of food safety hygiene and HACCP standards
Strong leadership and team management capabilities
Excellent communication organizational and time-management skills
Ability to perform effectively under pressure in a fast-paced production environment
Proactive mindset with strong problem-solving and decision-making abilities
Experience managing large-scale kitchen operations is highly advantageous
Required Skills:
Bachelors degree and/or diploma in Hotel Management or a related field. Proficiency in MS Office Property Management Systems (PMS) and Revenue Management Tools preferred. Experience: Minimum 7 years of experience in a 5-star hotel environment in roles such as Deputy Manager Assistant Operations Manager or Hotel Manager.
