- Supervises and assist the chef in managing the Kitchen Department.
- Guides the group to accomplish tasks and to reach goals.
- Fills any vacancy in the department.
- Assists Schedules labor employees.
- Help in the creation of new plat du jour items including recipes, ingredients, method of preparation and costing sheets
- Allocates resources to assure production according to priority.
- Orders the daily production according to the production request.
