Overview
Responsible for the shift management of all kitchen and front of the house food service operations and staff at Iroquois Springs Camp and Conference/Retreat Center; including menu planning, ordering, food preparation, kitchen cleanliness, overseeing all catering events/banquets, appropriate staff scheduling, and guest satisfaction. The Food Service Director oversees a team of 30+ kitchen staff and serves up 800 meals per seating.

This is a senior management position that requires maturity, professionalism, and the ability to maximize talent. The ideal candidate is a natural motivator that has exemplary communication skills, and in-depth knowledge of kitchen operations. Must be able to live onsite and be fully vaccinated.

Roles & Responsibilities

• Operate within a developed budget and provide accurate data and timely completion of all recording and reporting activities.

• Effectively coordinate with the Camp management to ensure high levels of customer service/satisfaction and seamless cooperation between front of house and back of house operations.

• Order food, supplies, and equipment necessary for the food service operation. Maintain adequate inventory of high use items. Properly store and dispose of food items.

• Plan delicious and nutritious meals and deliveries to ensure the best utilization of the facilities and staff to meet customer needs, including food allergies.

• Responsible for compliance with all Federal, State and Local Health Codes and overall quality assurance in the kitchens. Maintain high standards of cleanliness, sanitation, and safety in all food-service areas, including kitchen, dining hall, storage, recycling and be ready at all times for ACA, state, and local inspections and tours.

• Operational knowledge of a wide variety of food service equipment, including computers, dish machine, steamer, ovens, fryers, slicer, tilt skillet, refrigeration, etc.

• Effective interpersonal skills in order to maintain positive working relationships with food service staff, vendors, guests, department managers and other employees.

• Train, develop, supervise and evaluate employees to ensure maximum productivity is attained and morale is at a high level. Monitor scheduling, time keeping and training for Food Service personnel. Set performance and accountability standards and follow through with evaluation of performance.

Qualifications

• Culinary degree preferred, minimum of five years’ experience in high volume food preparation, institutional food service, buffet presentation, and carryout/grab and go service.

• Must be ServSafe certified

• Strong leadership qualities and experience, proven record of sound managerial and organizational skills to plan and serve up to 2400 meals per day during peak seasons.

• In-depth understanding of restaurant best practices and cooking methods

• Role includes unloading food, carry trays of dishes, lifting supplies and equipment up to 70 pounds, as needed. Must be able to move safely over uneven terrain or in confined spaces.
