Job Summary

Our client is looking for a Butchery Specialist to join their team

Salary & benefits:

Negotiable

Responsibilities:

  • Operation and management of the shop in-store butchery including selection ordering preparation display packaging and sale of pork to consumer and wholesale customers. Attend meetings with the Shop Manager advising on pricing costing margins and GP to ensure maximum profitability in butchery section.
  • Estimate requirements and order supplies from factory for shop floor and in-store butchery.
  • Receive inspect record and store meat upon delivery to ensure quality and safety.
  • Wrap weigh label and price cuts of meat
  • Prepare and place meat cuts and products in display counter so they will appear attractive and catch the shoppers eye.
  • Engage customers in terms of understanding the meat requirements and meeting those needs.
  • Continually sell and market meat as a protein of choice.
  • Prepare special cuts of meat ordered by customers
  • Supervise other instore butchery /deli staff and schedule work activities rotas and holidays in consultation with management ensuring butchery peak times are managed and fully staffed. Also offer on-the-job training and coaching to staff members and motivate and develop team including setting objectives & strategies.
  • Ensure that all food hygiene and safety standards are met and keep up to date with industry standards
  • In consultation with senior management agree and run special offers customer loyalty schemes and similar.
  • Inspect equipment regularly to ensure it is in good working order and safe to use
  • Develop constructive and cooperative working relationships with team and the larger team and maintain them over time encouraging mutual trust respect and cooperation. Assist and care for co-workers customers and suppliers.
  • Develop design and create new applications ideas relationships systems or products to build and improve the business.
  • Recommend to management any training courses that would enhance the performance of team.
  • Report all injuries to the shop and SHEQ managers in time.
  • Always maintain your presence behind the butchery to avoid any short cuts by the blockman

  • Have the ability to lead and motivate a team
  • Have commercial acumen and sound business sense
  • Have the ability to prioritise multi-task and delegate as appropriate
  • Have the ability to make appropriate decisions in a responsible and timely manner
  • Have the ability to interpret and analyse sales figures
  • Understand the legal and regulatory environment including relevant health safety and hygiene requirements; updating the HACCP file each time new processes product and regulations arise.
  • Be well versed in Food Safety Management systems
  • Have verbal and written communication skills
  • Qualifications
  • Minimum 5 O levels including English Maths and/or Accounts
  • Experience in managing retail butchery essential
  • Proven track record within Retail Meat industry.
  • Recognised qualification/certification within the Meat industry an advantage
