We are currently seeking a skilled and passionate Chef de Partie to join our culinary team at Pullman and Mercure Brisbane. As an experienced member of the kitchen team you will play a significant role in supervising operational aspects of the kitchen and ensure food hygiene and safety procedures are followed.
- Manage and coordinate activities within your assigned kitchen section
- Ensure efficient workflow and seamless coordination with other kitchen areas
- Maintain impeccable hygiene and kitchen standards in line with HACCP requirements
- Prepare and cook dishes according to our menu specifications and quality standards
- Train and mentor junior kitchen staff including apprentices and commis chefs
- Assist in menu development and implementation of new food concepts
- Collaborate with the sous chef and executive chef to maintain kitchen efficiency
- Monitor and control food waste stock levels and kitchen resources
- Adapt quickly to changing priorities during busy service periods.
Qualifications :
- Previous experience in a similar role and environment.
- Trade qualifications in commercial cookery.
- Excellent technical knowledge with experience in all cooking techniques and styles.
- Excellent organisational skills & grooming standards.
- Genuine commitment to guest service attention to detail and passionate about the Industry
- Passionate about providing exceptional product and committed to undertake growth and development within the Pullman brand
