Job Summary

We are currently seeking a skilled and passionate Chef de Partie to join our culinary team at Pullman and Mercure Brisbane. As an experienced member of the kitchen team you will play a significant role in supervising operational aspects of the kitchen and ensure food hygiene and safety procedures are followed.

  • Manage and coordinate activities within your assigned kitchen section
  • Ensure efficient workflow and seamless coordination with other kitchen areas
  • Maintain impeccable hygiene and kitchen standards in line with HACCP requirements
  • Prepare and cook dishes according to our menu specifications and quality standards
  • Train and mentor junior kitchen staff including apprentices and commis chefs
  • Assist in menu development and implementation of new food concepts
  • Collaborate with the sous chef and executive chef to maintain kitchen efficiency
  • Monitor and control food waste stock levels and kitchen resources
  • Adapt quickly to changing priorities during busy service periods.

Qualifications :

  • Previous experience in a similar role and environment.
  • Trade qualifications in commercial cookery.
  • Excellent technical knowledge with experience in all cooking techniques and styles.
  • Excellent organisational skills & grooming standards.
  • Genuine commitment to guest service attention to detail and passionate about the Industry
  • Passionate about providing exceptional product and committed to undertake growth and development within the Pullman brand
