Job Summary

This role will conduct carcass and carcass part sorting activities and identify any abnormal conditions or defects before carcasses and their parts are presented to online inspectors. The focus will be to separate carcasses heads and viscera that are abnormal from those that are normal.

Key Responsibilities

  • Observe palpate and incise carcass and carcass parts to determine if abnormalities exist.
  • Perform preparation (e.g. cuts) and presentation activities.
  • Follow FSIS regulations and company procedures (e.g. heads tongues viscera carcass).
  • Notify the proper person if you identify while conducting sorting activities an animal or carcass you suspect has a reportable or foreign animal disease.
  • Attend training at hire and annual refresher training as needed.
  • Must be willing to train and educate others.

Qualifications

Minimum Qualifications (Required):

  • Must be 18 years of age or older.
  • Must be able to work in the United States without sponsorship.
  • Must be able to work in a variety of work temperatures warm hot humid cold wet or with slippery surfaces at varied heights in and around moving equipment and parts with the use of personal protective equipment (PPE).
  • High school diploma or GED.
  • Demonstrated knowledge of food safety and quality.
  • Must be able to successfully complete training:
    • Beef Modernization
    • Straight knife steel hook

Preferred Qualifications:

  • Hands-on knowledge training and/or experience in Basic Microbiology Basic Chemistry Sanitation and HACCP.
  • Knife experience.
  • Quality assurance experience.

Knowledge Skills and Abilities:

  • Must be able to work in a fast paced environment.
  • Strong attention to detail and observational skills.
  • Knowledge of beef anatomy to recognize common parts of the beef carcass skeleton and digestive tract.

Summary

Americas Heartland Packing is set to open its doors in early 2025. The 775000 sq. ft. greenfield project will include a harvest floor carcass chillers fabrication area rendering further processing area storage coolers freezers and loading docks.
