The Role

CUT New York is seeking an experienced and detail-oriented Butcher to join our culinary team. This role is essential to maintaining the quality consistency and integrity of our proteinsfrom whole-animal breakdown to precise portioning for service. The ideal candidate takes pride in technique cleanliness and working within a high-performance fine dining kitchen.

Key Responsibilities
  • Break down whole animals and primal cuts with precision and consistency

  • Fabricate portion trim and prepare meats according to CUT specifications

  • Maintain the highest standards of product quality yield and presentation

  • Properly store label rotate and track all proteins in accordance with food safety standards

  • Collaborate closely with the culinary leadership team and line cooks to support service needs

  • Maintain a clean organized and sanitary butcher station at all times

  • Adhere to all local state federal and company food safety and sanitation guidelines

Qualifications
  • Previous experience as a butcher or meat cutter in a fine dining or high-volume upscale restaurant

  • Strong knowledge of meat fabrication primal and sub-primal cuts and portion control

  • Excellent knife skills and attention to detail

  • Understanding of food safety sanitation and proper storage procedures

  • Ability to work efficiently in a fast-paced team-oriented kitchen

  • Authorization to work in the United States

Preferred Experience
  • Experience working with premium beef programs and dry-aged products

  • Familiarity with steakhouse or chef-driven restaurant environments

  • Culinary school or formal apprenticeship training a plus
