The Role
CUT New York is seeking an experienced and detail-oriented Butcher to join our culinary team. This role is essential to maintaining the quality consistency and integrity of our proteinsfrom whole-animal breakdown to precise portioning for service. The ideal candidate takes pride in technique cleanliness and working within a high-performance fine dining kitchen.

Key Responsibilities
Break down whole animals and primal cuts with precision and consistency
Fabricate portion trim and prepare meats according to CUT specifications
Maintain the highest standards of product quality yield and presentation
Properly store label rotate and track all proteins in accordance with food safety standards
Collaborate closely with the culinary leadership team and line cooks to support service needs
Maintain a clean organized and sanitary butcher station at all times
Adhere to all local state federal and company food safety and sanitation guidelines
Qualifications
Previous experience as a butcher or meat cutter in a fine dining or high-volume upscale restaurant
Strong knowledge of meat fabrication primal and sub-primal cuts and portion control
Excellent knife skills and attention to detail
Understanding of food safety sanitation and proper storage procedures
Ability to work efficiently in a fast-paced team-oriented kitchen
Authorization to work in the United States
Preferred Experience
Experience working with premium beef programs and dry-aged products
Familiarity with steakhouse or chef-driven restaurant environments
Culinary school or formal apprenticeship training a plus
