About the role

Ventia is seeking a qualified Sous Chef to join our Hospitality and Catering Services team. Reporting to the Head Chef you will oversee daily kitchen operations mentor junior staff and ensure high standards of food safety and service delivery across routine meals field rations and mess functions.

Key Responsibilities include (but are not limited to):

  • Lead your designated kitchen section ensuring food preparation and presentation meets service standards
  • Supervise and mentor Cooks and Kitchen Hands
  • Maintain mise en place and ensure timely high-quality food production
  • Enforce food hygiene and safety protocols
  • Operate commercial kitchen equipment safely and competently
  • Support emergency and surge catering operations
  • Assist with inventory management and waste minimisation
  • Conduct effective shift handovers and maintain accurate food safety records
  • Foster a respectful inclusive and collaborative kitchen culture

About you

  • Certificate III in Commercial Cookery (Australian recognised)
  • 3 years experience in a large commercial kitchen
  • Strong knife skills and food safety knowledge
  • Excellent communication time management and organisational skills
  • Ability to lead and train junior kitchen staff

Must be eligible to hold a Defence Security Clearance. As a result of this requirement the applicant must be an Australian Citizen and be willing to undertake and maintain a satisfactory Australian Federal Police.
