You bring:

  • Proven experience as Sous Chef or a strong background as Senior Chef de Partie / Junior Sous Chef in an à la carte or hotel environment.
  • Excellent knowledge of kitchen operations cost control and stock management.
  • Strong leadership and people management skills you lead by example.
  • Passion for quality presentation and guest satisfaction.
  • Ability to work under pressure while maintaining a calm and positive attitude.
  • Strong understanding of HACCP and food safety standards.
  • Fluency in English (Dutch is a plus).
  • Flexibility to work mainly in the evenings weekends and holidays.
  • Residency in or near Rotterdam.
  • The legal right to work in the Netherlands.

What does your day look like as a Sous Chef
As Sous Chef you are the right hand of the Executive Chef and play a key role in the success of Restaurant JAQ and the hotels culinary operations. You lead by example and ensure that your team delivers an exceptional guest experience both in à la carte service and in Meetings & Events.
You are responsible for the daily operations of the kitchen guiding and motivating the team overseeing food quality and presentation and maintaining the highest standards of hygiene and safety. You collaborate closely with the Executive Chef to manage planning menu development and cost control.
Your main responsibilities include:

  • Supervising and coordinating daily kitchen operations across Restaurant JAQ and supporting outlets.
  • Leading coaching and developing the kitchen team to deliver consistent quality.
  • Ensuring excellent communication and cooperation between the kitchen service and other departments.
  • Monitoring food quality portion control and presentation in line with Hilton standards.
  • Managing purchasing inventory and cost control to ensure profitability.
  • Supporting the Executive Chef in menu development innovation and seasonal updates.
  • Ensuring compliance with HACCP and all health & safety regulations.
  • Taking responsibility for training development and performance management of the culinary team.
  • Contributing to a positive and inclusive team culture that reflects Hiltons values.
  • Acting as kitchen lead in the absence of the Executive Chef.
