Kitchen Lead
Milwaukee WI
Hours: 8:00 am - 2:00 pm
$18 - $23/hr
Goals/Objectives of Position:
Regulate food preparation and reduce operating expenses to meet companys objectives: zero defects zero shortages and timely deliveries. Train and develop team members.
Essential Duties:
- Remain directly involved (hands-on) with preparing food and assisting with transportation activities
- Establish and manage processes that ensure food is portioned correctly and assembled neatly and attractively on plates
- Monitor inventory by working closely with the Purchasing Agent
- Monitor and ensure food storage handling and preparation
- Monitor and ensure Kitchen sanitation
- Assist President and Operations Manager with budgeting and staff planning
- Identify report and address employee performance discussions
- Satisfy all health and safety codes required by state and local licensing bodies as well as OSHA
- Lead daily standups to motivate and keep workers informed of previous day issues and corrective action
- Participate in weekly team standups
- Open kitchen for daily operational functions
- Regulate AM Cook-Off and Dock Expeditor functions
- Manage daily waste walk (waste elimination)
Education/Experience Required:
Associates or Bachelors Degree in Administration (or related field) or equivalent experience; minimum of five years supervisory experience in an institutional food service setting. Must have or acquire Serve Safe certification.
Knowledge Required:
- Hands-on working knowledge of products/services as it relates to the food service industry.
- Understanding of department budgeting
- Ability to extend and reduce recipes
- Required core competencies: creativity curiosity critical thinking conscientious collaboration and agility.
Physical Requirements:
Must be able to lift a 30-pound load with occasional lifting of up to 50 pounds; pushing and pulling up to 100 pounds. Other: Permitted to work at schools and other Fresh & Safe jobsites.
