PURPOSE
The Director of Dining Services plans delivers assesses and oversees ongoing improvement of food service operations serving a predominantly residential community college campus of approximately four hundred (400) students and two hundred (200) faculty staff guests and visitors. The Director is responsible for the preparation and serving of all meals. The Director manages the food service production and delivery system including purchase and inventory of food and supplies ensuring food quality nutrition and productivity standards. Additionally they will be responsible for the hiring evaluating coordinating motivating scheduling and supervising the department staff. Work in conjunction with the Director of Residence Life to support a comprehensive dining experience for housing residents.

Description of Essential Functions

Operational Management (34% of Time)

  1. Direct day-to-day operations of the Southwestern Oregon Community College Dining Services to meet and exceed industry standards for all production including student meal plans and the establishment and maintenance of a safe workplace.
  2. Responsible for all phases of food purchasing preparation production control merchandising service food costing and inventory control. Help with cost control & payment of invoices.
  3. Works to continually improve of the Dining Services menu cycle for student housing residents board plan utilizing nutritional guidelines as required by the State.
  4. Works with staff and students to develop and test all recipes used in menu production.
Leadership/Administration (33% of Time)
  1. Responsible for hiring supervising and evaluating Dining Services staff including externs which will include the developing of leadership abilities and strengthen overall department in their efforts to serve the students and guests of Southwestern Oregon Community College Dining Services. This includes evaluating performance and recommending disciplinary action when needed.
  2. Directs the overall orientation and training of new personnel.
  3. Participate in relevant professional development to enhance competence and knowledge.
  4. Responsible for maintaining strong internal controls for cash handling. Collaborate with the Business Office on best practices and controls for cashiering and receipting activities.
  5. Represent the department internally by attending college committees and meetings.
  6. Provides leadership in the development of department goals and objective to support the strategic priories.
  7. Represent the college to outside groups and agencies.
Financial Management (33% of Time)
  1. Manages the financial operations of dining services including developing and monitoring departmental budgets managing revenues and expenditures to meet established goals and overseeing accounting responsibilities.
  2. Monitors labor costs food costs and operational costs that affect the financial status of the department. Identifies variances and develops plans to manage them.
  3. Collaborates with the executive director of business services on financial and operational reporting operational processes and procedures improvements and purchasing.
Performs Other Duties and Special Projects as Required/Assigned

Required Knowledge Skills and Abilities

REQUIRED QUALIFICATIONS

  • Industry Certification and/or combination of experience equivalent to at least six (6) years in the culinary arts field with at least two (2) years full-time (or the equivalent in combined part-time) experience in one or more of the following; as a working chef management of a restaurant culinary arts program or a commercial kitchen or related business.
  • Have or have ability to obtain a valid food handlers card and Oregon LCC server permit.
  • Familiarity with state health department regulations and industry standards for safety and sanitation.

  • Demonstrated budget planning management and monitoring skills.
  • Ability to read and understand technical documents and manuals as well as the ability to write such documents for use by others.
  • Be able to maintain records and prepare reports.
  • Ability to model and ensure diversity and cultural competency (respect inclusiveness reflecting valuing and welcoming cultural differences) in all position responsibilities regardless of race ethnicity religion gender social class sexual orientation ability nationality age language origin or employment status.
  • Ability to follow established college and department procedures and work independently to accomplish those procedures. Ability to implement general directives and Board policies in the assigned areas of responsibility.
  • Strong interpersonal skills that will consistently cultivate positive relationships with internal and external constituencies.
  • Ability to write and communicate at a professional level utilizing a high level of computer skills sufficient to use software such as word processing spreadsheets and data bases to produce correspondence documents and reports as required by the position. Produce professional quality correspondences documents spreadsheets reports and notifications in a timely manner meeting deadlines and schedules.
  • Ability to work effectively and sensitively with individuals of diverse cultural backgrounds and perspectives and abilities. Sensitivity to barriers faced by students from economically and/or educationally disadvantaged backgrounds.

PREFERRED QUALIFICATIONS
Applicants for this position possessing one or more of the following knowledge skills and abilities will receive preferred consideration through the selection process:
  • Bachelors degree in culinary arts or related field.
  • Certified Executive Chef and/or Certified Culinary Educator.
  • Five (5) or more years of successful management for a large culinary based operation (e.g. hotel restaurant college or school etc.).
