Chef Jean brought his distinctive style from South Africa to the UK earning a Michelin star within a year of opening and a Green Michelin Star for sustainability in 2023. His cooking is rooted in foraging hyperseasonality and estategrown produce all set within the stunning Leonardslee Gardens estate in West Sussex.
At Interlude foraging is not just a culinary technique; its a philosophy shared across the entire kitchen team. Chefs head out into the woodlands gardens and grounds to handpick ingredients from wild herbs and edible flowers to mushrooms and berries all of which inspire the everevolving tasting menu.
