Responsibilities:
Main responsible for the preparation of all food items at the station according to specifications and preset time limits
Essential Functions: These requirements/functions may change over the course of employment and are not limited to:
1. Follows all recipes, meat temperatures "doneness", portion controls, and presentation specifications as set by the restaurant.
2. Coordinates the delivery of all foods within preset time standards.
3. Demonstrates product standards and recipe knowledge daily during daily Black Tap Line Checks.
4. Sets up, maintains side work, and/or closes station for scheduled shift (e.g., preps all appropriate food items, labels, dates, and rotates food items according to FIFO method, breaks down and cleans equipment).
5. Sets prep production through the use of daily and weekly sales reports.
6. Prepares and plates food items according to specifications and preset time limits.
7. Ensures safety and sanitation standards are met.
8. Properly uses personal protective equipment (e.g. gloves, head net, etc.)
9. Wears disposable gloves when handling raw and ready-to-eat food products, and changes gloves when preparing a new or different food product.
10. Responds to all callbacks and echoes to ensure ordered food is prepared on time.
11. Insures Hot food is Hot and served on a warm plate, and Cold food is Cold and served on cold plates.
13. Records all waste on the waste sheet when it occurs.
14. Communicates any low-on, out-of-stock products, equipment issues, and quality of service problems to the KM and/or FOH immediately.
15. Assists with the cleaning, sanitation, receiving, stocking, and organization of the kitchen, walk-in-coolers, and all storage areas.
16. Performs additional responsibilities, although not detailed, as requested by the KM, GM, or FOH
17. Obtains and maintains any certifications required by the local health department.
