Venue Manager – Folio Bar & Roslyn Packer Theatre

Folio is a cocktail bar and dining destination attached to the 900-seat Roslyn Packer Theatre in Walsh Bay. Designed to complement the theatre experience while standing confidently in its own right Folio brings together thoughtful food considered drinks and genuine hospitality in one of Sydneys most distinctive cultural precincts.

While theatre audiences provide a strong foundation Folio is more than a pre-show destination. The venue presents a significant opportunity to grow its identity as a neighbourhood cocktail bar dining room and events space attracting guests beyond performance schedules and building a loyal repeat customer base.

About the Role

Reporting directly to the Operations Manager you will lead the hospitality operations across Folio and Roslyn Packer Theatre balancing exceptional guest experiences strong commercial performance and the unique operational demands of a live performance environment.

• Leading venue operations end-to-end setting the tone for service culture and performance
• Being present on the floor driving service standards and guest experience across restaurant bar event and theatre service periods
• Overseeing food and beverage performance maintaining exceptional standards across dining beverage service and event delivery
• Driving revenue growth through the development of non-theatre trade positioning Folio as a destination cocktail bar and dining venue beyond performance nights
• Identifying opportunities to grow local patronage corporate bookings private events and community engagement
• Working closely with marketing and leadership teams to develop initiatives that increase visitation guest frequency and venue awareness
• Supporting the delivery of theatre performances opening nights corporate functions and special events in collaboration with venue and production teams
• Building mentoring and leading a high-performing team with a focus on accountability and development
• Managing rostering labour stock control and operational budgets to deliver strong commercial outcomes
• Maintaining strong operational systems compliance standards and workplace safety practices across all areas of the venue

About You

Youre a hands-on venue leader with strong operational foundations and a passion for building businesses developing teams and creating memorable guest experiences.

• Proven experience leading premium restaurants bars event venues or multi-faceted hospitality operations
• A strong food and beverage background with a genuine appreciation for quality products and service
• Demonstrated success growing venue trade developing local audiences and establishing hospitality venues as destinations in their own right
• Experience driving venue growth increasing trade and building customer loyalty through operational excellence and local engagement
• A commercial mindset with the ability to identify opportunities improve performance and deliver sustainable growth
• Experience operating within events entertainment cultural institutions or high-volume hospitality environments
• The ability to build inspire and hold teams to a high standard
• Strong financial acumen with a clear understanding of labour management cost control and revenue drivers
• High attention to detail across both product and service
• A calm grounded leadership presence with strong emotional intelligence
• A genuine passion for hospitality and creating experiences that keep guests coming back
