- Embrace Fairmont philosophy, standards of servıce and operatıng procedures
- Forecast sales, covers and payroll costs.
- Assigns the Assistant manager, Supervısor & Captains, lıne staff with responsibilities and side duties, tasks that they are best suited for.
- Ensures that all duties, tasks & services are carried out accordingly to the required standards as prescribed by Raffles Hotel
- Maintain consistency in quality of food, beverage and service
- Attend all briefing and meetings held by the department and update all latest policies.
- Possess excellent knowledge of the menus as well as the preparations and presentations. This includes being well knowledgeable with the bar & wine operations.
- Ensure that good hygiene standards in the service areas are always maintain and that all furniture and equipment are always kept in clean and good condition.
- Review the work performance of the subordinates to make sure that established procedures and policies are followed.
- Promote sales through guests’ contacts. Constantly obtain customer feedback during operations to ensure satisfaction.
- Make recommendations to the Management on other potential source of revenue e.g promotions etc.
