Job Summary
The Head Chef Japanese Cuisine is responsible for leading the Japanese kitchen operations ensuring the highest standards of authenticity quality and consistency across all offerings. This role drives culinary excellence innovation cost control and team development while delivering exceptional guest experiences aligned with the hotels brand standards.
Qualifications :
- Open for both Local Hire (Foreign National) Local Expatriate Assignment candidates & National Talent subject to applicable work permit and immigration regulations.
- Mastery in Japanese culinary techniques including:
- Teppanyaki & Hot Japanese cuisine preparation
- Knife skills and meat/fish handling
- Hot kitchen specialties (tempura robatayaki teppanyaki donburi etc.)
- Strong knowledge of Japanese ingredients seasonality and authenticity standards
- Menu engineering costing and kitchen financial control
