Head Chef
Job Summary
As Head Chef you will lead the end-to-end kitchen operation driving both culinary excellence and commercial performance in a fast-paced regional environment.
This is a hands-on leadership role requiring strong operational discipline team development capability and the ability to deliver consistent high-quality food while managing cost labour and compliance.
Key responsibilities include:
- Leading daily kitchen operations across breakfast lunch dinner and functions
- Designing and executing menus aligned with brand standards and local market demand
- Driving food quality presentation and consistency across all service periods
- Managing food cost wastage stock control and supplier relationships
- Leading coaching and developing a small kitchen team in a regional setting
- Ensuring full compliance with food safety WHS and Accor brand standards
- Collaborating with the General Manager on commercial performance promotions and guest experience
- Supporting conference and group business with tailored catering solutions
This role is ideal for a chef who thrives in autonomy enjoys building team capability and understands the commercial realities of a regional hotel operation.
Qualifications :
To be successful in this role you will bring a balance of culinary expertise leadership capability and commercial awareness:
- Proven experience as a Head Chef or Senior Sous Chef ready to step up
- Strong understanding of cost control rostering and kitchen financials
- Demonstrated ability to lead and develop teams particularly in smaller or regional environments
- Experience across à la carte buffet and function service
- Solid knowledge of food safety standards and compliance requirements
- Ability to work independently take ownership and drive standards without heavy structure
- Flexibility and resilience to succeed in a regional location
Highly regarded:
- Experience within hotel or multi-outlet environments
- Previous experience working in remote or regional locations
- Understanding of Accor systems and brand standards
