Head Chef

As Head Chef you will lead the end-to-end kitchen operation driving both culinary excellence and commercial performance in a fast-paced regional environment.

This is a hands-on leadership role requiring strong operational discipline team development capability and the ability to deliver consistent high-quality food while managing cost labour and compliance.

Key responsibilities include:

• Leading daily kitchen operations across breakfast lunch dinner and functions
• Designing and executing menus aligned with brand standards and local market demand
• Driving food quality presentation and consistency across all service periods
• Managing food cost wastage stock control and supplier relationships
• Leading coaching and developing a small kitchen team in a regional setting
• Ensuring full compliance with food safety WHS and Accor brand standards
• Collaborating with the General Manager on commercial performance promotions and guest experience
• Supporting conference and group business with tailored catering solutions

This role is ideal for a chef who thrives in autonomy enjoys building team capability and understands the commercial realities of a regional hotel operation.

Qualifications :

To be successful in this role you will bring a balance of culinary expertise leadership capability and commercial awareness:

• Proven experience as a Head Chef or Senior Sous Chef ready to step up
• Strong understanding of cost control rostering and kitchen financials
• Demonstrated ability to lead and develop teams particularly in smaller or regional environments
• Experience across à la carte buffet and function service
• Solid knowledge of food safety standards and compliance requirements
• Ability to work independently take ownership and drive standards without heavy structure
• Flexibility and resilience to succeed in a regional location

Highly regarded:

• Experience within hotel or multi-outlet environments
• Previous experience working in remote or regional locations
• Understanding of Accor systems and brand standards
