Shangri-La Hotel Colombo overlooks the Indian Ocean in the heart of the business district with direct access to the most extensive international shopping mall in Sri Lanka Shangri-Las own One Galle Face Mall. The hotel offers the finest accommodation in Colombo an exciting new dining and social scene and the largest and extensive hotel conference and event facilities. The hotel comprises of 541 rooms and suites.

At Shangri-La hospitality from the heart defines who we are. We are looking for a passionate and experienced Executive Sous Chef to support the culinary leadership team in delivering exceptional dining experiences and maintaining the highest standards of food quality and kitchen operation.

In the role we rely on you to:

• Act as the key support to the Executive Chef in shaping and executing the hotels culinary vision ensuring alignment with brand standards and guest expectations.
• Lead and oversee multi-outlet kitchen operations ensuring consistency quality and excellence across à la carte banquets in-room dining and specialty outlets.
• Drive culinary innovation through trend-driven menus experiential dining concepts and sustainable sourcing practices.
• Establish implement and monitor SOPs quality benchmarks and plating standards to ensure flawless execution.
• Manage financial performance including food cost control budgeting forecasting and procurement to ensure profitability.
• Build mentor and develop a high-performing culinary team through training coaching and succession planning fostering a strong team culture.
• Ensure exceptional guest experiences while maintaining full compliance with food safety hygiene standards and sustainability initiatives.
• Optimize kitchen operations using efficient workflow planning and lean principles to enhance productivity and minimize waste.

We Are Looking for Someone Who:

• Has 810 years of progressive culinary experience including minimum 5 years in leadership roles in luxury hotels.
• Demonstrates strong commercial acumen with the ability to balance creativity and profitability.
• Is a transformational leader with the ability to inspire mentor and retain top culinary talent.
• Has deep expertise in multi-cuisine operations banquet production and high-volume service environments.
• Is highly adaptable innovative and driven by excellence.
• Possesses strong stakeholder management and cross-functional collaboration skills.
• Is passionate about culinary trends sustainability and continuous improvement.
