Job Summary
We are seeking an experienced and passionate Head Chef to lead our Kitchen team driving menu innovation operational excellence and team development. This is an opportunity to shape a dynamic kitchen inspire creativity and elevate an exceptional food menu. Key Responsibilities:
- Leading and mentoring a high-performing kitchen team fostering a culture of excellence collaboration and professional growth.
- Designing and delivering creative high-quality menus aligned with the Mercure brand and seasonal produce.
- Ensuring exceptional food standards from preparation to presentation.
- Overseeing cost control budgeting and stock management to maintain profitability and efficiency.
- Implementing stringent food safety and hygiene standards in compliance with WHS regulations.
- Collaborating with hotel leadership suppliers and event coordinators to deliver seamless dining experiences.
- Driving a customer and guest-focused culture ensuring every dish contributes to an outstanding dining experience.
- Oversee kitchen rostering staff performance and training to maintain high operational standards.
Qualifications :
What Were Looking For:
- Proven experience as a Head Chef in a busy Hotel environment who likes to be part of the action in the Kitchen.
- A strong background in menu development and cost control with a keen eye for detail and quality.
- Exceptional leadership skills with the ability to motivate and mentor a diverse kitchen team.
- A deep understanding of food trends sustainability and seasonal produce to drive creativity.
- Strong financial acumen ensuring efficient stock control budgeting rostering and cost management.
- A commitment to excellence in food safety hygiene and workplace health & safety standards.
