Food & Beverage Director
Location: Ketchikan Alaska
A premier 107-room waterfront hotel in Ketchikan is seeking an experienced Food & Beverage Director to lead all dining operations including a full-service restaurant pub & grill and banquet/catering services. This role carries full P&L responsibility and oversight of BOH and FOH leadership.
What Youll Do
- Provide strategic and hands-on leadership across all F&B outlets.
- Manage budgeting forecasting labor and cost controls.
- Develop seasonal menus and drive profitability in a high-volume tourism market.
- Recruit train and mentor culinary and service teams.
- Ensure compliance with food safety alcohol service and regulatory standards.
- Strengthen guest satisfaction and community engagement.
- Maintain adherence to all local state and federal health and safety regulations.
- Implement and monitor HACCP and food safety programs.
- Ensure compliance with alcohol service laws allergen management protocols and OSHA standards.
- Foster a culture of safety and accountability.
- Recruit train and retain high-performing culinary and service professionals.
What Were Looking For
- 10 years of multi-outlet F&B leadership experience
- Proven success managing full P&L responsibility
- Strong operational financial and team development skills
- Experience in seasonal or destination markets preferred
- Bachelors degree in hospitality management Business Administration Culinary Arts or related field preferred
- Culinary expertise is a plus with potential opportunity for role expansion for the right candidate
- Proficiency in POS systems inventory software and Microsoft Office
- Ability to thrive in a fast-paced seasonal environment
- Flexible schedule availability including evenings weekends and holidays
- Ability to stand for extended periods and lift up to 50 lbs as needed
