Italian Chef de Cuisine / Marco Polo Kitchen

We are seeking a passionate and accomplished Italian Chef de Cuisine to lead our Italian culinary operation. This is a key leadership role for a chef who combines authentic Italian culinary expertise with creativity operational excellence and strong people management skills.

Position Purpose

The Italian Chef de Cuisine is responsible for overseeing all aspects of the Italian kitchen ensuring culinary excellence consistency and innovation while maintaining cost efficiency and brand standards. You will lead and inspire a professional kitchen team deliver memorable guest experiences and uphold Shangri-Las commitment to quality and sustainability.

Key Responsibilities

  • Recipe & SOP Development: Create document and standardize authentic Italian recipes and kitchen SOPs with a strong understanding of Italian ingredients traditions and culinary roots.
  • Menu Engineering: Design creative commercially viable menus aligned with market trends guest expectations and profitability goals.
  • Cost & Inventory Control: Manage food cost purchasing ordering and inventory to ensure operational efficiency and financial discipline.
  • Team Leadership: Lead train and motivate a kitchen team of 912 culinary professionals fostering teamwork and effective communication.
  • Quality & Consistency: Ensure consistent food quality presentation and taste across all services.
  • Food Safety & Hygiene: Maintain the highest standards of cleanliness discipline and food safety compliance.
  • Creativity & Sustainability: Think creatively and support the hotels sustainability and responsible sourcing initiatives.
  • Operational Flexibility: Support banquets and other food & beverage outlets when operationally required.
  • Guest Engagement: Interact confidently with guests through live cooking stations VIP dining experiences and special requests.
  • Performance Under Pressure: Demonstrate strong leadership and decision-making in a fast-paced high-volume environment.
  • Hotel Operations Knowledge: Work effectively within a structured hotel kitchen environment and collaborate with cross-functional teams.

Candidate Profile

  • Experience: Minimum 5 years of experience as an Italian Sous Chef or higher position in a hotel or high-end restaurant.
  • Language Skills:
    • English: Basic to Intermediate
    • Mandarin: Basic conversational level required
  • Leadership Skills: Proven ability to manage teams coach talent and build a positive kitchen culture.
  • Technical & Administrative Skills:
    • Intermediate computer skills (Excel Word PowerPoint)
    • Familiar with kitchen administration and reporting
  • Personal Attributes: High attention to detail discipline professionalism and passion for Italian cuisine.
