Job Summary

Events Restaurant Café Leadership with Craft

We are seeking an experienced and passionate Head Pastry Chef to lead our pastry operation across multiple food outlets conferences events and premium dining experiences.

Reporting to the Executive Chef this role is ideal for a pastry professional who thrives in a Multi outlet hotel environment enjoys large-scale production as much as refined plated desserts and takes pride in leading a small high-performing team.

About the Role

This is a hands-on leadership role responsible for delivering consistent high-quality pastry products across:

  • Day delegate conferences and large buffet services
  • Plated desserts for gala events and restaurant service
  • Café items seasonal offerings and grab-and-go concepts
  • Celebration cakes VIP amenities and special requests

You will play a key role in maintaining brand standards managing costs developing people and ensuring guests receive an exceptional experience every time.

Key Responsibilities

  • Lead and manage the pastry kitchen team across all outlets and events
  • Operate a true Multi outlet pastry kitchen maximising shared people and equipment resources
  • Ensure all pastry offerings meet and exceed Pullman brand standards
  • Maintain the highest standards of food preparation presentation and consistency
  • Drive a strong food safety culture in line with HACCP and WHS requirements
  • Work closely with other hotel departments to ensure seamless service delivery
  • Direct stewarding support to meet operational pastry requirements
  • Foster a positive learning-focused kitchen culture built on teamwork and respect

Qualifications :

About You

  • Proven experience as a Head Pastry Chef or Senior Pastry Chef in a hotel or large-scale operation
  • Strong background in high-volume production and plated desserts
  • Confident managing costs stock rosters and people
  • A calm organised leader who leads by example
  • Passionate about pastry craft presentation and continuous improvement
  • Comfortable working within brand standards while still being creative

A natural communicator who values teamwork and guest experience
