Job Summary

Located in the most exciting state-of-the-art development to come to DTLA this luxurious 28-story hotel will have over 300 rooms a spa 16000 square foot rooftop with a pool deck over 16000 square feet of event space and 6 food and beverage outlets. This includes a signature restaurant & bar a signature bar rooftop restaurant lobby bar pool and in-room dining all in partnership with Chef Jose Andres award-wining restaurant group Jose Andres Group.

The ideal candidate will have at least three (3) years of culinary leadership experience

About The Grand LA

The Grand LA combines lifestyle arts and culture to provide a truly unique experience in Los Angeles. It is at the epicenter of downtown LAs cultural corridor across from the Walt Disney Concert Hall with two towers a 45-story residential and 28-story hotel and more than 176000 square feet of retail space anchored by chef-driven restaurants and a collection of shops entertainment and hospitality.

What will I be doing

  • Assist the Executive Chef in the direction and oversight of all culinary operations to include but not limited to preparation and production of all hotel meals food quality and presentation compliance with all safety and sanitation standards and regulations team member productivity and performance implementation of policies and procedures cost controls and overall profitability
  • Create and implement menu selections for special banquet themes and events based on current food trends and regional tastes in partnership with the Executive Chef and Director of Food and Beverage as needed
  • Ensure compliance with federal state local and company health safety sanitation and alcohol awareness standards
  • Assist in monitoring and developing team member performance to include but not limited to providing supervision conducting counseling and assisting with evaluations training scheduling and assigning work and delivering recognition and reward
  • Interviews selects trains appraises schedules disciplines and supervises kitchen staff in kitchen during the cooking of food items.
  • Supervises kitchen staff in the proper preparation cooking and garnishment of various menu items.
  • Assists in the development and enforcement of policies to control food cost and quality.
  • Ensures proper receiving storage (including temperature-setting) and rotation of food products so as to comply with Health Department regulations.
  • Leads menu planning activities.
  • Schedules culinary staff so that proper coverage is maintained while keeping payroll costs in line.

Salary Range: The annual salary range for this role is $75000 - $80000 and is based on applicable and specialized experience and location.
