Job Overview

We are seeking an experienced and innovative Head Chef to oversee kitchen operations at a premium beach resort. The ideal candidate will demonstrate exceptional culinary skills leadership abilities menu creativity and strong food safety compliance. This role requires someone with proven experience managing a busy hospitality kitchen ensuring excellent dining experiences cost control and consistent quality standards.


Key Responsibilities

Kitchen Leadership & Operations

  • Oversee daily kitchen operations and staff performance including training supervision and scheduling.

  • Lead motivate and mentor kitchen personnel to ensure smooth workflow and a high-performing team.

  • Coordinate kitchen activities to ensure timely preparation and service of meals.

Menu Development & Execution

  • Create and update high-quality diverse menus featuring local seafood continental dishes grills and specialty cuisines.

  • Design special event and seasonal menus in line with resort offerings (weddings private dinners themed nights).

  • Ensure consistency in food presentation taste and quality.

Procurement Cost & Inventory Management

  • Manage kitchen budgeting food costing stock control and minimize waste using methods like FIFO.

  • Liaise with suppliers to source quality food items at competitive prices.

  • Ensure accurate documentation and timely ordering of food beverages and kitchen supplies.

Health Safety & Compliance

  • Enforce strict adherence to hygiene standards (HACCP COSHH food safety regulations).

  • Conduct routine inspections to ensure kitchen cleanliness equipment functionality and compliance with regulatory standards.

  • Maintain proper food handling allergen control storage compliance and temperature logs.

Customer & Resort Experience

  • Maintain a professional and positive image when interacting with management and resort guests.

  • Support special guest requests dietary needs and provide solutions-based service.

Qualifications

  • Minimum of HND/BSc in Hospitality Management Culinary Arts Food Science or any related field.

  • Additional Culinary Certification (e.g. Culinary Diploma City & Guilds) is an added advantage.

  • Minimum 5 years proven experience as a Head Chef or Senior Sous Chef in a hotel resort or restaurant.

  • Good knowledge of Nigerian continental seafood and grill menus.

  • Must have strong leadership organizational and communication skills.

  • Ability to work under pressure during weekends holidays and peak periods.
