Summary
The Captain Server oversees daily lounge service supporting both leadership and front-line staff to ensure each guest experience reflects Sundances standards of authenticity craftsmanship and understated luxury. This role blends hands-on service with calm thoughtful leadership maintaining consistency presentation and precision throughout every shift.
Essential Functions
- Lead pre-shift briefings to review priorities menu highlights and service standards.
- Guide and support servers and bartenders through coaching feedback and mentorship.
- Coordinate with the kitchen and bar to ensure pacing accuracy and quality.
- Oversee setup and breakdown to maintain cleanliness and readiness.
- Monitor inventory requisitions and par levels for all service items.
- Engage guests with genuine hospitality anticipating needs and ensuring satisfaction.
- Maintain documentation including shift reports and operational checklists.
- Serve as liaison between management and staff for seamless communication.
Product Quality:
- Prepare and present beverages to company standards.
- Follow recipes precisely and maintain top presentation.
- Educate guests on products and services.
Alcoholic Beverages:
- Understand and comply with Utah alcohol laws.
- Serve responsibly and complete all required documentation.
- Communicate beverage options clearly and knowledgeably.
Other Duties:
- Maintain clean safe and organized work areas.
- Stock supplies and ensure equipment remains in good repair.
Supervisory Responsibilities:
- Assist with hiring training and performance management.
- Address employee issues and recognize strong performance.
- Complete and submit HR paperwork promptly.
Qualifications
- High School Diploma or equivalent; hospitality coursework preferred.
- 2 years in luxury or boutique hotel dining required.
- 1 year in a supervisory or captain role preferred.
- Strong communication and leadership skills.
- Must meet Utah alcohol certification requirements.
- Professional composure under pressure; detail-oriented hospitality focus.
