Introduction

BUTCHERY MANAGER (RETAIL / FMCG)

WATERFALL DURBAN KWAZULU NATAL PROVINCE

MINIMUM ESSENTIAL QUALIFICATIONS:

  • Matric
  • Qualification in Butchery / Food Production(Advantageous)
  • Minimum of 5 years working experience as a Butchery Manager in a Retail environment and managing a large team (min 30 staff)
  • Food handlers licence(Essential)
  • Strong knowledge of meat processing production inventory management and retail operations
  • Strong financial acumen related to stock control pricing and profitability
  • Manage and co-ordinate daily operations of both a supermarket butchery and a butchery plant
  • Proficient on Point of Sales
  • Proficient on all MS Office packages
  • Valid drivers license (no endorsements)
  • Own reliable vehicle

BRIEF DESCRIPTION OF KEY PERFORMANCE AREAS DUTIES & RESPONSIBILITES:

Key Performance Areas and Responsibilities: -

  • Manage butchery targets and profitability ensuring financial goals are met or exceeded.
  • Control stockeffectively including managing and setting ideal stock levels per product category.
  • Set thecorrect product rangeto be available at the right time of day and week to meet customer demand.
  • Ensurescales are correctly calibratedand that product weights and prices are accurately maintained.
  • Negotiate and procure quality raw materials and bought-in lines as well as expense items according to customer requirements using a daily ordering system aligned with the production schedule.
  • Responsible forpoint of sale systems and pricing accuracy.
  • Conductdaily weekly and monthly gross profit (GP) reportingto monitor financial performance.
  • Take full responsibility for allquality control activitieswithin the butchery.
  • Manage allhygiene and safety activities ensuring compliance with relevant food safety legislation.

  • Ensure the use ofcorrect chemicals and proceduresto maintain a sanitized and pest-free environment.
  • Oversee and ensure that the butchery complies withall relevant food safety and health regulations.
  • Overseeweekly stocktakesto ensure accurate inventory records and minimize losses.
  • Implement and monitor standard operating procedures to maximize efficiency and minimize waste.
  • Liaise with suppliers manage orders and ensure timely delivery of products to various branches.
  • Manage the function and performanceof butchery staff members including scheduling performance reviews and disciplinary actions.
  • Ensureclient satisfactionby maintaining high standards in product quality and customer service.
  • Perform othermanagerial dutiesas assigned.
  • Arrange and overseetraining programsfor staff when required.
  • Provideon-the-job mentoring and coachingto develop butchery staff members.
  • Manage and coordinate daily operations of both the supermarket butchery and the butchery plant.
  • Lead motivate and supervise a team of at least 45 staff members across both sections.
