Key Responsibilities
- Recruit train schedule and supervise the stewarding team.
- Monitor performance and provide coaching and feedback to ensure high standards of cleanliness and efficiency.
- Develop cleaning schedules and ensure tasks are completed in compliance with sanitation and safety standards.
- Oversee inventory and proper use of cleaning supplies chemicals and dishwashing equipment.
- Maintain organization of all back-of-house storage areas including china silver glassware and kitchen equipment.
- Operate and maintain dishwashing machines and ensure proper sanitation of all dishes utensils and kitchenware.
- Ensure the kitchen and prep areas are clean organized and free of hazards.
- Remove trash and recycling and ensure waste is disposed of properly and promptly.
- Assist culinary and banquet teams with setup and breakdown as needed.
- Enforce all local state and federal health department rules and regulations.
- Ensure compliance with OSHA and Hilton brand standards for food safety and cleanliness.
- Conduct regular inspections of the kitchen and dish areas to ensure cleanliness and equipment maintenance
Qualifications & Skills
- Previous experience in stewarding or dishwashing in a high-volume hotel or resort setting.
- At least 1 year of supervisory or team lead experience is preferred.
- Knowledge of commercial kitchen equipment sanitation procedures and cleaning chemicals.
- Ability to lead a team while also working hands-on in a physically demanding environment.
- Strong organizational and communication skills.
- Must be able to lift up to 50 lbs and work standing for extended periods.
- Availability to work flexible shifts including nights weekends and holidays.
