Position Summary

The Chef de Cuisine is responsible for overall quality control and implementing systems. The Chef de Cuisine will ensure safety quality efficiency of operations and services and budget accountability for the Culinary Programs and Central Kitchen. The Chef is actively engaged in the production and preparation of meals oversees the preparation of food and ensures cleanliness of the kitchen and dining areas and students involved in planning preparing and serving the food. The Chef de Cuisine will teach culinary classes as needed for Chopping for Change (C4C) and Culinary Training Program (CTP) students.

Some of the duties include:

  • Adheres to budget management and costeffective program delivery of Central Kitchen CTP and C4C
  • Oversee the daily progress of the students in the culinary program
  • Incorporate the culinary training program and assists in developing participants in the work experience program
  • Facilitate Culinary classes at designated locations
  • Manage kitchen production
    • Help supervise C4C/CTP participants in basic food preparation
    • Supervise and ensure the safety and security of program participants
    • Demonstrate proper food handling and cutting techniques assist students as necessary.
    • Insure all food items are sealed dated and properly stored according to regulation
  • Actively engaged in daily production activities of Central Kitchen and oversees activities of students and other kitchen workers engaged in preparing and cooking food
  • Within defined budget responsible to meet labor and overhead costs; works collaboratively with Executive Chef to meet food and supply budget through ordering and inventory control
  • Helps with effective invoicing & payment process with Purveyors
  • Establishes and directs ingredient and food portion policy to control costs
  • Responsible for overall safety and sanitation in the kitchen; ensures that all kitchen areas are clean sanitary and safe in compliance with food service and workplace environment regulation
  • Ensures equipment tools and appliances are maintained in good working order and serviced at appropriate intervals

Qualifications

Our ideal candidate must have an Associates Degree or equivalent in Culinary Arts or a related field along with at least five years of chef experience that includes supervising training and developing staff. ServSafe Certification is required or must be obtained within three months of hire. Experience working with highbarrier populations such as individuals facing poverty homelessness or involvement in the criminal justice system is essential. Additionally candidates must be able to pass a PREA background check conducted by the Ohio Department of Rehabilitation and Corrections and possess a valid Ohio drivers license with proof of insurance.
