Job Summary
Job Role
The Food & Beverage Controller is responsible for overseeing cost control inventory management and financial performance of all food and beverage operations. This role ensures profitability minimizes wastage and maintains strict control systems.
Key Responsibilities
- Monitor and control food & beverage costs across all outlets
- Conduct regular inventory audits (daily/weekly/monthly)
- Analyze variance reports (theoretical vs actual consumption)
- Implement portion control and wastage reduction strategies
- Collaborate with chefs and bar managers on menu costing
- Ensure proper procurement and vendor management practices
- Set up and enforce standard operating procedures (SOPs)
- Prepare MIS reports for management review
- Train staff on cost-awareness practices
Project Goals
- Achieve targeted food cost % and beverage cost %
- Reduce pilferage and wastage to industry benchmarks
- Improve inventory accuracy and reporting efficiency
- Strengthen financial discipline across F&B operations
Requirements
Required Skills
- Strong knowledge of food & beverage costing
- Experience with inventory systems (POS / ERP)
- Analytical mindset with attention to detail
- Advanced Excel skills
Preferred Qualifications
- 58 years in F&B control or similar role
- Hospitality degree or certification in finance/cost control
- Pre-opening experience is a plus
