The Role
Bubba Gump Shrimp Co. is one of the most recognised names in hospitality worldwide and our Sandgate venue is looking for experienced chefs to join the team. This is a high-volume full table service restaurant open seven days a week for lunch and dinner known for its energetic atmosphere strong service culture and consistently high standards. We are seeking passionate and motivated Commis Chefs to join the kitchen team at Bubba Gump Shrimp Co Sandgate. This role is responsible for managing and supporting designated kitchen sections delivering high-quality dishes and contributing to smooth kitchen operations within a fast-paced high-volume restaurant environment.
You will work closely with the Head Chef and Sous Chef to maintain exceptional food standards consistency and efficient service while helping create an energetic and team-focused kitchen culture.
Key Responsibilities
- Manage and run your designated kitchen section during prep and service periods
- Assist in daily kitchen operations including mise en place and service execution
- Maintain consistency quality and presentation standards across all dishes
- Support the Sous Chef and Head Chef during busy service periods
- Ensure compliance with food safety hygiene and workplace health and safety standards
- Assist with menu preparation and seasonal menu updates relevant to your section
- Monitor stock levels and communicate ordering requirements
- Maintain a clean organised and efficient workstation
- Contribute to smooth and efficient service delivery in a high-volume environment
- Work collaboratively with the wider kitchen team to maintain operational standards
About You
- Proven experience as a Commis Chef with strong grill and fry exposure
- Strong attention to detail in food preparation and presentation
- Ability to confidently manage or support a kitchen section during service
- Strong understanding of food safety standards and kitchen operations
- Team-focused with a positive reliable and hardworking attitude
- Able to thrive in fast-paced high-volume restaurant environments
- Excellent communication and time management skills
- Passionate about hospitality food quality and teamwork
Requirements:
- Must be well qualified with a Commercial cookery 3 or 4 trade certificate and minimum 1 year post apprenticeship commercial cooking experience
- Availability to work weekends and peak service periods
- Full working rights in Australia and availability to work evenings weekends and public holidays
- Strong knowledge of kitchen hygiene food safety and operational standards
