Chef De Partie Full Time
Job Summary
We are seeking a passionate Full-Time Chef de Partie to join our dynamic kitchen team in Sydney this role you will take ownership of your designated kitchen section leading the preparation and presentation of high-quality dishes while maintaining the highest standards of food safety hygiene and presentation. Working closely with the Executive Chef and Sous Chef you will support kitchen operations mentor junior team members and contribute to delivering exceptional dining experiences. - Supervise kitchen operations in the absence of the Executive Chef and Sous Chef ensuring efficient service delivery.
- Lead support and motivate kitchen team members by setting a positive example.
- Assist with menu planning food preparation and maintaining adequate stock levels for service.
- Communicate with the Restaurant team regarding menu availability specials and changes.
- Maintain high standards of food quality presentation hygiene and cost control.
- Monitor stock rotation minimise food waste and ensure stock control procedures are followed.
- Train support and coordinate apprentices and junior kitchen team members.
- Prepare and maintain mise en place to ensure service readiness.
- Maintain a clean safe and organised kitchen ensuring all equipment is cleaned and well maintained.
- Assist with kitchen rostering to ensure appropriate staffing levels in line with operational requirements.
- Report operational issues equipment faults or food safety concerns to the Executive Chef or Sous Chef promptly.
Qualifications :
- Relevant culinary trade qualification (Certificate III in Commercial Cookery or equivalent).
- Previous experience as a Chef de Partie or in a similar role within a hotel restaurant or high-volume kitchen.
- Strong knowledge of food safety hygiene and HACCP principles.
- Understanding of menu preparation food presentation and seasonal ingredients.
- Experience in stock control stock rotation and minimising food wastage.
- Ability to supervise coach and support junior kitchen team members.
- Excellent organisational communication and time management skills.
- Ability to work under pressure and manage a designated kitchen section efficiently.
- Flexible to work a rotating roster including weekends public holidays and evenings.
- A positive attitude strong work ethic and commitment to delivering exceptional guest experiences in line with Accors Heartist values.
