Job Summary
Pullman Melbourne on the Park are seeking an experienced Bar Manager who will be responsible for overseeing the daily operations strategic growth and creative flare of both Cliveden Bar and Sanctum Headquarters.
As a Bar Manager your responsibilities will include (but not limited to):
- Leading daytoday outlet operations with a focus on seamless service with authentic engagement strong product knowledge and excellence in service standards.
- Having a visible handson presence on the floor setting the pace of service supporting peak periods and resolving operational issues in real time.
- Manage coach and motivate team members including onthejob training allocation of tasks monitoring performance during service and providing strong communication.
- Champion a safe inclusive and respectful workplace aligned with the hotels values supporting engagement recognition and team communication.
- Support onboarding of new team members and ensure all staff adhere to grooming attendance and conduct standards.
- Ensure compliance with OH&S food safety and responsible service of alcohol (RSA) requirements including incident reporting and escalation.
- Maintain high standards of cleanliness miseenplace and Bar Outlet presentation including daily walkthroughs and checklists.
- Oversee cash handling endofshift reconciliation POS accuracy and basic stock control (voids transfers wastage mini stocktakes as delegated).
- Actively support achievement of revenue targets through upselling menu knowledge and driving average check and covers while managing wage cost during shifts.
Qualifications :
The ideal candidate will possess the following skills and experience (but not limited to):
- Previous experience as an F&B Supervisor Assistant Manager or Duty Manager in a highvolume bar environment.
- Proven experience leading a team during busy service periods with strong floor presence and confidence in managing guest issues.
- Current Victorian RSA and working rights in Australia; additional food safety certification is highly regarded.
- Strong product knowledge across wine cocktails and contemporary dining with the ability to train others and support upselling.
- Demonstrated understanding of OH&S food safety and RSA obligations in a hotel environment.
- Competent with POS systems and basic Microsoft Office; exposure to hotel PMS and events systems is an advantage.
- Availability to work a rotating roster including mornings evenings weekends public holidays and major event days at the MCG.
- Excellent communication and interpersonal skills with a calm solutionsfocused approach under pressure.
