This is a unique opportunity for a passionate and skilled individual to elevate the food experience at a prestigious island lodge while managing both guest and staff culinary offerings.
Key Outputs:
Oversee the overall standards of food production for both guests and staff
Implement and uphold kitchen standards; conduct regular visits to the staff kitchen and canteen
Develop mentor and train kitchen staff to enhance individual skills and promote internal growth
Manage departmental administrative duties including staff records schedules and hygiene compliance
Create seasonal menus based on guest profiles and available ingredients
Ensure all food presentation aligns with brand guidelines and food identity
Continuously elevate the culinary offering through creative dishes and guest experiences
Maintain excellent stock controls ordering processes and stock rotation
Proactively maintain all kitchen equipment to ensure functionality and safety
Maintain strong communication with chefs heads of department lodge management and suppliers
Personally check all food prepared for guests ensuring the highest quality and presentation
Greet and interact with guests building strong relationships and inviting feedback
Ensure awareness of all guest and staff dietary requirements
Maintain communication and collaboration with company food consultants for feedback and idea sharing
Model discipline fairness and leadership across the kitchen and wider lodge environment
Qualifications & Experience Required:
Formal culinary qualifications with a minimum of 2 years management experience in a 5star environment
Ability to work well under pressure with excellent attention to detail
A guestfocused attitude with a strong work ethic and eagerness to learn
Key Skills Required:
Deep passion for food and exceptional guest experiences
Effective team leadership and management capabilities
Ability to inspire and motivate the kitchen team
Creativity in menu development and service delivery
Strong knowledge of hospitality operations including butler service housekeeping and laundry
Proficiency in computer and administrative systems
