Join the Culinary team at Chase Field home of the Arizona Diamondbacks and be part of an energetic fast-paced environment where every day brings new opportunities to create exceptional dining experiences. As a Lead Utility Cook youll prepare high-quality meals for a variety of events contributing to memorable moments for fans and guests.
Responsibilities:
- Supervise and guide prep cooks and utility staff ensuring adherence to recipes portion control cooking standards according to specifications and Levy Core Signature standards.
- Enforce kitchen safety standards and food safety compliance including proper food handling cross-contamination prevention and maintaining safe food temperatures.
- Oversee the preparation of ingredients ensuring quality standards and compliance with safety protocols; check food temperature during preparation cooking and storage.
- Comply with all health safety and sanitation regulations; follow established safety standards for food handling preparation cooking and storage
- Perform prep duties such as chopping vegetables marinating proteins and preparing other ingredients according to recipes and production sheets.
- Ensure all kitchen equipment and stations are properly cleaned and maintained following safety procedures and sanitation guidelines.
- Supervise equipment usage and cleanliness within the kitchen.
- Assist with inventory management ensuring ingredients are stocked; complete production logs and monitor portion control and waste.
- Work collaboratively with Culinary team to ensure timely service and efficient operations.
- Assists with all event types including catering department specific products game day events.
- All other duties as assigned
Qualifications:
- Experience in food preparation or culinary arts large-volume kitchen experience preferred.
- 5 years experience in a Lead or Supervisory Culinary role preferred.
- Strong knowledge of culinary techniques knife skills and kitchen operations.
- Ability to multitask and work effectively under pressure in a fast paced environment.
- Knowledge of food safety regulations sanitation practices and HACCP guidelines.
- Ability to follow instructions and work collaboratively in a team environment.
- This position may require the following valid certifications Maricopa County approved Food Handler certification.
- Flexibility to work evenings weekends and holidays as required for stadium events.
Physical Requirements:
- Ability to stand and walk for prolonged periods ranging 6-12 hours during events or as required by operational demands.
- Exposure to heat steam and cold temperatures within the kitchen environment.
- Ability to lift push pull and carry up to 50 lbs.
- Manual dexterity and coordination to perform tasks such as chopping cutting and food preparation.
- Ability to bend stoop kneel and ascending/descending stairs as necessary
- Frequently required to use fingers and hands to operate equipment
