General Purpose:
Manages the day-to-day operation of the kitchen toinclude:staffing menu planning ordering vendor monitoring food production inventorycateringand budgeting.
Essential Duties:
- Overseesall food production operations at the facility and ensures the production of consistentlyhigh qualityfood for all the restaurantoutlets.
- Implements andmaintainscontrol procedures within the department including daily foodproduction charts steak inventory and seafood charts standardized recipes use records food costingsheets.
- Createsmaintainsand updates menu specifications recipes and pictures and productionforecasts.
- Maintains and evaluates existing food concepts as well as thedevelopingof new ones to ensurethe highest quality of food andprofitability.
- Inspectsselectsand uses only the freshest fruits vegetables meats fishfowland otherfood productsin order tomaintainthe highest standard in the preparation of all menuitems.
- Participates in long and short-term goals to achieve budgetaryobjectivesfor the Food andBeverage department.
- Maintains a quality sanitation program in allareas.
- Monitors to ensure proper receiving storage (including temperature setting)and rotation offood productsso as tocomply withHealth Departmentregulations.
- Prepares requisitions for supplies and food items forproduction.
- Monitors all equipment in the kitchen to ensure cleanliness and proper workingcondition.
- Selectstrainsand supervises kitchen staff in the proper preparation of menu itemsequipmentoperationand safetymeasures.
- Responsible for interviewing hiring training planning assigning and directing work evaluating performancerewardinganddiscipliningassociates;addressingcomplaintsandresolvingproblems.
- Manages department members that mayinclude butisnot limited to: Cooks andStewards.
- Assures that effective orientation and training are given to each new trainingprograms.
- Monitors business volume forecast and plans accordingly in areas ofmanpower productivitycostsand otherexpenses.
- Incorporates safe work practices in jobperformance.
- Regular and reliableattendance.
- Performs other duties asrequired.
Education/Experience:
Associates degree (AA) or equivalent from two-year college or technical school; or six months toone yearrelated experience and/or training; or equivalent combination of education and experience.
Physical Demands:
Frequently stands walks uses handstalksor hears. Regularly reaches with hands and armstastesor smells. Occasionally sits climbs balances stoops kneels crawls or lifts up to 25 pounds occasionally lifts up to 100 pounds.
Environment/Noise:
Occasionally works in wet or humid conditions (non-weather) and in extreme heat or cold (non-weather).Occasionally works in outdoor weather conditions and may come into contact with toxic or caustic is moderate.
Certificates/Licenses:
Food Safety and Applicable Sanitation Training
Job Knowledge Skill and Ability Preferences
- Ability to read and speak English may berequiredin order toperform the duties of the job ( associates maybe requiredto communicate with English speaking customers or co-workers the manuals for the equipment the associates may use are inEnglish).
- Good working knowledge of accepted sanitation standards and applicable healthcodes.
- Knowledge of food and beverage products proper preparation and presentation of foodand beverageitems.
