Senior Sous Chef

STK Stratford is a high-energy rooftop steakhouse at The Gantry known for premium steaks seafood and its signature VIBE dining experience. The venue also hosts brunches Sunday roasts private events and late-night dining so this is a fast-paced kitchen environment with plenty going on.

We are looking for an experienced and passionate Senior Sous Chef to join the STK Stratford kitchen team.

As Senior Sous Chef you will be the right hand to the Head Chef playing a key role in leading the brigade and ensuring every service runs smoothly. You will be a hands-on leader who can inspire the team maintain exceptional food standards and stay calm and focused during busy services.

• Support the Head Chef in the day-to-day running of the kitchen.
• Lead and motivate the kitchen brigade creating a positive and high-performing team environment.
• Take ownership of kitchen operations during service and lead the team when the Head Chef is not present.
• Ensure all dishes consistently meet STKs standards for quality presentation and taste.
• Maintain exceptional standards of food preparation cooking and plating.
• Lead service and ensure the kitchen operates efficiently particularly during busy periods.
• Demonstrate strong knowledge and experience across grill meat seafood and hot sections.
• Carry out daily line checks and ensure all sections are fully prepared for service.
• Ensure HACCP food safety health & safety and hygiene standards are maintained at all times.
• Support menu development specials and seasonal offerings.
• Assist with ordering stock control portion control and minimising food waste.
• Support the Head Chef with labour and food cost management.
• Train coach and develop junior members of the kitchen team.
• Monitor kitchen performance and address any issues quickly and professionally.
• Work closely with the wider STK management team to deliver an exceptional guest experience.
• Support private dining events and high-volume service periods.
• Maintain a clean organised and professional kitchen at all times.

Were looking for someone who:

• Has previous experience as a Senior Sous Chef Sous Chef or strong Junior Sous Chef in a high-volume quality-driven kitchen.
• Has strong experience in a steakhouse premium restaurant or luxury hospitality environment.
• Has excellent knowledge of meat seafood and grill techniques.
• Is a confident and hands-on leader.
• Can motivate and develop a diverse kitchen team.
• Remains calm organised and solutions-focused under pressure.
• Has excellent attention to detail and takes pride in food quality.
• Understands food costs stock control and kitchen profitability.
• Has a strong understanding of food safety and HACCP procedures.
• Is passionate about delivering exceptional food and experiences.
• Has a positive attitude and leads by example.
• Is flexible and comfortable working evenings weekends and during busy periods.
