What youll do
As Sommelier youll lovewhat you do and take pride in taking care of our guests:
- You will be responsible for delivering knowledgeable warm andattentive wine and sake service across the restaurant and PDR.
- You will guide guests through our wine and sake selection makingrecommendations that complement the cuisine and individual preferences.
- You will maintain strong knowledge of Japanese sake wine servicestandards and beverage presentation.
- You will work closely with the chefs and service team to ensureseamless pairing recommendations and an exceptional guest experience.
- You will support the management of beverage stock includingreceiving storage inventory control and maintaining the presentation of thecellar and service areas.
- You will contribute to the development of our beverage offering andstay curious about new producers regions and styles.
- You will recognise regular guests and provide personalised servicereflecting our focus on Japanese hospitality and attention to detail.
- You will show flexibility and creativity when dealing with specialrequests and challenges that may arise during service.
The items shared are theessence of a day in the life of our Sommelier but we will make sure you are provided withspecifics on how we care for our hotel.
The operational hours of work are shift-based and we would requireflexibility. These shifts arecurrently set as:
- Full-time opportunities available; shiftpatterns will be discussed at interview.

- Previous experience in a fine diningrestaurant or luxury hospitality environment is preferred.
- Strong knowledge of wine is essential;knowledge of Japanese sake is highly desirable.
- You have excellent communication and guestservice skills with a genuine passion for hospitality.
- You are confident professional andcomfortable working in a high-end international environment.
- English is the primary language used in ourhotel. You can comfortably communicate in English.
- A recognised wine or sake qualification isdesirable but not essential.
