An excellent opportunity has arisen for an experienced Restaurant Manager to take responsibility for the front-of-house operation of one of Nottinghams leading fine-dining restaurants.
Holding 1 Michelin Star and 4 AA Rosettes the restaurant offers a highly creative tasting-menu experience built around exceptional British produce modern technique and bold distinctive flavours. The operation is deliberately intimate with a small team and a service style where detail personality and genuine guest engagement matter.
This is a hands-on management position for someone who enjoys being present on the floor while also taking ownership of the organisation behind the scenes from bookings and guest communication through to the smooth day-to-day running of the restaurant.
This is an established Michelin-starred fine-dining restaurant in the heart of Nottingham currently holding 4 AA Rosettes alongside its Michelin Star.
The food is modern and highly individual combining British produce with international influences and techniques including fermentation pickling and koji. The restaurant currently offers a choice of tasting experiences with menus shaped around seasonality creativity and minimal waste.
Current restaurant services are concentrated across just four days each week:
- Wednesday & Thursday dinner
- Friday & Saturday lunch and dinner
The restaurants current reservation schedule confirms evening service Wednesday and Thursday with both lunch and dinner on Friday and Saturday.
As Restaurant Manager youll take responsibility for the smooth day-to-day operation of the restaurant while leading a small front-of-house team.
This is very much a hands-on position. Youll be expected to maintain the standards of a Michelin-starred operation while ensuring the restaurant remains warm organised and guest-focused.
Your responsibilities will include:
- Managing and developing a small front-of-house team
- Leading restaurant services and maintaining consistently high standards
- Overseeing all upcoming reservations and bookings
- Managing guest correspondence emails and enquiries
- Handling the day-to-day administration of the restaurant
- Organising and preparing the restaurant ahead of each service
- Ensuring every guest receives knowledgeable professional and personable service
- Working closely with the kitchen to coordinate the pacing and delivery of tasting menus
- Managing guest requirements dietary information and special requests
- Maintaining excellent organisation and attention to detail across the restaurant
- Taking ownership of the overall front-of-house operation
With such a focused team this is a role where the Restaurant Manager will have genuine influence over both the guest experience and the way the restaurant operates.
- 4-day working week
- Wednesday & Thursday: 12pm close
- Friday & Saturday: 10am close
- Sunday Monday & Tuesday off
- Restaurant services concentrated across WednesdaySaturday
The exact finishing time will naturally depend on the completion of evening service.
Were looking for an experienced hospitality professional who understands the level of detail required within serious fine dining.
Youll ideally have:
- Restaurant management or strong Assistant Restaurant Manager experience
- Experience within Michelin high AA Rosette or comparable fine dining
- Confidence leading a small team
- Excellent guest-service standards
- Strong organisation and attention to detail
- Experience managing restaurant reservations and bookings
- Confidence handling guest correspondence and administration
- A good understanding of tasting-menu service and service pacing
- Strong communication skills and a calm approach during service
- The ability to combine polished standards with warm natural hospitality
- A genuine interest in food wine and progressive restaurants
An experienced Assistant Restaurant Manager ready to take their first Restaurant Manager position could also be particularly interesting if they already have the right fine-dining background.
- 35000 base salary

Restaurant Manager opportunities at this level dont often come with a genuine four-day working week and three consecutive days away from the restaurant.
Youll be taking responsibility for the front of house of a Michelin-starred 4 AA Rosette restaurant but within a deliberately small operation where youll know your guests work closely with the kitchen and have real influence over how the restaurant is run.
For an established Restaurant Manager or a strong Assistant Manager ready to step up who wants to remain within ambitious fine dining without returning to a five- or six-day hotel-style operation this is a particularly attractive opportunity.
