Job Title:

Nutrition Analyst University Culinary Services-INR

Basic Function:

Manage food service nutrition systems database to support operations at all Kent State University campuses and provide data analysis of new recipes in compliance with USDA guidelines. Reports to designated administrator.

Examples of Duties:

Duties/essential functions may include but not be limited to the following:

Analyze recipes based on specific nutrition guidelines and/or ingredients. Test recipes to ensure accuracy of measurements and instructions quality flavor yield nutrition information and other specified criteria. Analyze menus and recipes for nutritional adequacy.

Collect and annotate database of ingredients for compliance within different food categories for dietary needs.

Review and validate current nutrition data using credible sources. Deliver nutrition and ingredient analysis of all new recipes.

Provide content editing of recipes head notes nutrient analysis and accompanying materials.

Offer nutrition-based information with a health focus to student and consumer constituents.

Conduct one-on-one nutrition counseling and consultations for consumers with special dietary needs.

Work with the culinary team to ensure students dietary needs are being accommodated and arrange for specially prepared meals purchase of prepackaged foods or sourcing special requests when the daily menu offerings do not meet their needs.

Work with student accessibility/disability services and campus health services for proper student registration and medical documentation as it pertains to meal plan exemptions and accommodations.

Maintain a working knowledge of HIPPA and FERPA guidelines.

Conduct food and allergy safety training for units on campus offering science-based information in training modules and work with the culinary team to obtain appropriate food safety certifications.

Perform audits for dining locations to ensure proper allergen display and standard operating procedures are followed in certified locations.

Plan develop and implement nutrition programming and events for University Culinary Services and collaborate with key stakeholders for a united campus effort to assist in the promotion of health and wellness within the campus community and for individuals with dietary needs.

Minimum Qualifications:

Bachelors degree in food science culinary arts clinical nutrition food and nutrition or related programs. Two years of related experience.

License/Certification:

Registered Dietitian Nutritionist (RDN) with licensure in the state of Ohio.

Knowledge Of:

Cultural competence including multicultural awareness

Performing nutrition assessments

Risk and safety practices relative food service environment

Skill In:

Written verbal and interpersonal communication

Providing educational information regarding nutrition

Evaluating programs/services and making recommendations *

Developing nutrition programs which are safe inclusive and diverse

Ability To:

Define problems co lect data establish facts and draw valid conclusions

Read and comprehend a variety of written material

Gather co late and classify information

Preferred Qualifications if applicable:

Masters degree in food science culinary arts clinical nutrition food and nutrition or related programs.
