Le Perroquet
Le Perroquet is an all-day French brasserie from Michelin-starred Chef Daniel Rose offering classic French dishes crafted with seasonality technique and a sense of occasion in the heart of Mayfair. It will open at The St. Regis London Mayfairs newest luxury destination located at the corner of Conduit and New Bond Street.
As a Commis Chef you will support the culinary brigade in delivering the exceptional dining experiences that define The . You will prepare ingredients with precision uphold the highest standards of cleanliness and organisation and contribute to the creation of beautifully presented dishes. This role is ideal for an ambitious detailoriented culinary professional eager to refine their craft in a worldclass luxury environment.
Key Responsibilities
- Prepare ingredients including portioning chopping peeling and storing food
- Wash and prepare fresh produce to the highest hygiene standards
- Weigh measure and mix ingredients accurately for recipes
- Cook dishes according to recipes quality expectations and presentation guidelines
- Prepare cold foods and support miseenplace for your section
- Operate kitchen equipment including ovens stoves grills microwaves and fryers
- Monitor food quality throughout preparation
- Set up and break down workstations ensuring organisation and cleanliness
- Maintain impeccable hygiene by washing and disinfecting tools equipment and work areas
- Uphold company policies professional appearance standards and confidentiality
- Maintain positive working relationships and support team goals
Core Competencies
We are seeking a passionate and dedicated culinary professional who embodies the essence of luxury hospitality. You should have:
- Qualification in Hospitality studies degree standard or similar preferred
- At least two year of experience in a professional kitchen
- Strong foundational culinary skills and a desire to learn and grow
- Excellent attention to detail and commitment to quality
- Strong communication skills and the ability to work under pressure
