Job Summary

The Executive Chef is a creative culinary visionary and structured operator responsible for the overall culinary identity of the establishment. This leadership role oversees all back-of-house operations ensuring the highest echelon of ingredient quality artistic presentation kitchen sanitation and sensory delight. The Executive Chef must successfully manage food costs and direct a rigorous brigade system to consistently deliver an unforgettable fine-dining menu.

Key Responsibilities
1. Culinary Vision Menu Innovation & Execution
  • Design test and masterfully execute sophisticated high-end menus that seamlessly match the restaurants premium concept.

  • Stay continuously updated on global fine-dining trends molecular gastronomy and seasonal availability to develop innovative recipes special features and tasting selections.

  • Maintain rigorous standard recipe cards specifying precise plating layouts portion controls and flavor consistency frameworks.

2. Kitchen Brigade Leadership & Mentorship
  • Recruit train and structurally organize the kitchen brigade (Sous Chefs Chefs de Partie Line Cooks and Stewards).

  • Teach and enforce advanced professional cooking techniques knife handling skills and optimal safety habits among all kitchen tiers.

  • Cultivate a disciplined focused yet inspiring back-of-house culture based on respect execution accuracy and professionalism.

3. Service Expediting & Quality Control
  • Direct "the pass" during peak dining periods serving as the final quality control gate check for dish timing temperature portioning and artistic plating before food reaches the guest.

  • Monitor prep lists and line efficiency to guarantee smooth low-latency pacing between courses.

4. Cost Control & Supply Chain Management
  • Audit food cost percentages against budgeted targets and optimize kitchen yields to protect restaurant margins without compromising ingredient grade.

  • Cultivate strong partnerships with high-end component suppliers negotiate raw material terms manage fresh stock inventory and significantly limit daily food spoilage.

5. Safety Hygiene & Regulation Compliance
  • Implement and strictly enforce regional health guidelines NAFDAC standards and HACCP safety principles.

  • Guarantee that all deep-cleaning shifts tool sterilization tasks and storage temperatures strictly mirror premium food service criteria.

Required Skills & Qualifications
  • Experience: Minimum of 35 years of specialized experience as a Head Chef Executive Sous Chef or senior culinary leader in a recognized fine-dining restaurant Michelin-starred venue or luxury 5-star hotel environment.

  • Technical Mastery: Expert knowledge of premium modern cooking methodologies (e.g. sous-vide low-temperature roasting precision curing and emulsion chemistry) and specialized industrial kitchen hardware.

  • Team Direction: Demonstrated capability to command organize train and structurally discipline a fast-moving multi-tiered kitchen brigade.

  • Stress Tolerance: Exceptional capacity to maintain composure focus and authoritative clarity during high-stakes high-volume fine-dining services.

  • Food Quality & Presentation: Consistency in plating excellence and flavor profile validation scores based on guest feedback loops.
