Job Summary

The Assistant Executive Chef is responsible for Wynn Resorts culinary excellence and supporting the Executive Chef in advancing the Restaurants distinguished reputation. This role demands accountability for maintaining Wynns premier food quality standards and achieving financial objectives with precision. Primary responsibilities encompass curating culinary innovation orchestrating resources with refined efficiency and cultivating a brigade of culinary professionals committed to exceptional artistry and service. The Assistant Executive Chef ensures unwavering adherence to all government health regulations industrial safety standards corporate and departmental policies and Culinary Bargaining Agreement.

Essential Job Duties & Responsibilities

Culinary Operations & Innovation will be approximately 45% of this role and include but is not limited to the following:

  • Curate distinctive menu innovations while maintaining the integrity of the outlets culinary concept.
  • Uphold Wynns distinguished food quality standards with unwavering consistency.
  • Elevate the caliber of culinary execution to enhance the overall guest experience through refined quality assurance.
  • Establish and maintain rigorous standards and protocols that foster a safe sophisticated workplace environment.
  • Identify address and promptly report any actual or potential concerns to ensure workplace and environmental safety.
  • Empower and encourage culinary team members to participate in decision-making processes fostering accountability and professional growth.
  • Identify and implement best practices establishing excellence benchmarks that distinguish our culinary operations.

Financial Stewardship will be approximately 10% of this role and include but is not limited to the following:

  • Maintain disciplined food cost management while strategically monitoring labor expenditures cost of goods and operational expenses.

Culinary Leadership & Team Development will be approximately 45% of this role and include but is not limited to the following:

  • Ensure direct reports exemplify Wynns policies and procedures while maintaining the highest standards of integrity and accountability.
  • Lead the culinary brigade to advance organizational excellence by defining roles purpose responsibilities and performance expectations.
  • Demonstrate consistent leadership across varying conditions cultivating trust and confidence within the team.
  • Embody and advance Wynns core values in all business conduct and decision-making.
  • Mentor culinary professionals through thoughtful coaching and positive reinforcement fostering continuous professional development.
  • Recognize and celebrate exceptional performance through meaningful recognition programs and professional acknowledgment.
  • Champion ongoing professional development for management monitoring progress and supporting career advancement.
  • Engage all members of the management team in strategic decision-making providing comprehensive perspective and collaborative leadership.
  • Facilitate refined pre-service briefings with back-of-house culinary staff to ensure operational excellence and alignment.

Qualifications :

  • Minimum of five (5) years of distinguished culinary management experience in a premier fine dining or luxury hospitality establishment
  • Current or ability to obtain and maintain all required certifications and credentials including Food Manager Certification and any applicable work authorizations
  • Demonstrated experience and refined understanding of union-governed culinary environments is highly valued
  • Proficiency in computer systems and advanced competency with Microsoft Office applications (Teams Outlook Excel Word PowerPoint)
  • Exceptional ability to communicate with eloquence and professionalism across all organizational levels
  • Demonstrated mastery in executing elevated culinary standards with meticulous attention to detail artistic creativity and precision
  • Proven capacity to maintain composure and exercise sound judgment while managing complex operations and resolving challenges with sophistication
  • Exceptional organizational acumen with the ability to prioritize strategically coordinate resources seamlessly and meet rigorous production schedules and timelines
  • Demonstrated excellence in culinary artistry including refined plate presentations and continuous innovation in menu development and product research
  • Proven leadership capability to direct inspire and elevate culinary teams to achieve organizational excellence
  • Strong collaborative mindset with the ability to work harmoniously within a team environment and contribute comprehensively across all operational facets
