POSITION OBJECTIVE: This job of Nutritional Services Operations Manager - Menu Planning is done for the purpose of providing direction and supervision to each school regarding nutrition health and wellness. Leads and executes menu development commodity management and supports district health and wellness initiatives. Ensures school cafeterias and the department adheres to district state and federal standards and regulations as related to the National School Lunch/Breakfast programs and Summer Food Program. |
DUTIES & RESPONSIBILITIES:(These duties are a representative sample; position assignments may vary.) - Directs supervises and monitors the site cafeteria managers to ensure that all department state and federal policies procedures and regulations are being maintained.
- Develops and updates menus production records and recipes to meet the nutritional and health guidelines set by Federal Meal Program guidelines.
- Develops special dietary menus and provides guidance to school staff and parents regarding special dietary needs.
- Prepares plate costing analysis and assists in maintain food cost goals.
- Monitors federal commodity balances and completes annual processing surveys.
- Works closely with warehouse receiving clerk to monitor week food orders and monthly inventory.
- Establishes and maintains a department procedure and recipe manual.
- Develops implements and measures service strategies including pilot programs for the purpose of increasing student participation satisfaction and revenues in the meal programs.
- Develops implements and monitors training and in-service programs to increase skills and knowledge of site cafeteria managers and site staff in the areas of nutrition food quality.
- Assists other district and departmental employees as assigned for the purpose of completing food services tasks.
- Develops HACCP manual and procedures for food safety and sanitation.
- Maintains and updates nutritional software; including nutritional analysis of menus.
- Plans and executes marketing program (in conjunction with Director of Nutritional Services) for the purposes of increasing the satisfaction level participation awareness and revenues of the Nutritional Services Department.
- Works closely with Director to communicate with district personnel students and parent groups for the purpose of promoting the department and child nutrition programs. May provide nutrition education to students parents and staff upon request.
- Assists with development and administration of surveys and taste testings to monitor food quality and customer service.
- Works with considerable independence under the general supervision of the Director of Nutritional Services.
- Performs other job related duties as assigned.

EDUCATION & EXPERIENCE(positions in this class typically require): Education: Bachelors degree in food service management and/or nutrition preferred. Serve Safe certification required. Experience: Five (5) years of progressive experience in food service management preferably school food service and/or nutritional experience as a dietitian in a community-based organization; or an equivalent combination of education and experience sufficient to successfully perform the essential duties of the job such as those listed above. |
CERTIFICATION REQUIREMENTS(positions in this class typically require): - Registered dietitian or registry-eligible a plus. Serve Safe food safety; sanitation card.

MATH ABILITY: - Ability to add subtract multiply and divide in all units of measure using whole numbers common fractions and decimals.

PHYSICAL REQUIREMENTS:
Positions in this class typically require: stooping kneeling crouching reaching standing walking pushing pulling lifting finger dexterity grasping talking hearing seeing and repetitive motions. Light Work: Exerting up to 20 pounds of force occasionally and/or up to 10 pounds of force frequently and/or negligible amount of force constantly to move objects. If the use of arm and/or leg controls requires exertion of forces greater than that for Sedentary Work and the worker sits most of the time.
