The North Carolina Department of Health and Human Services (DHHS) is one of the largest most complex agencies in the state and has approximately 17000 employees. It is responsible for ensuring the health safety and well-being of all North Carolinians providing human service needs for special populations including individuals who are deaf blind developmentally disabled and mentally ill and helping poor North Carolinians achieve economic independence.
Description of Work
This is skilled work in preparing/cooking a major portion or all a meal in a commercial kitchen. This position is usually responsible for preparing an entrée starch or vegetable for Breakfast Lunch and/or Supper meal. Cooks are responsible for all consistency modifications required including thickening products chopping mincing and pureeing food and beverage items to medically prescribed consistencies. Other responsibilities may include baking breads cakes and other dessert items; preparing special catered meals or party foods; processing foods for meal substitutions; and preparing special medically prescribed dietary meals etc. Work is performed in accordance with recipes and quantities of ingredients provided for each meal. This work requires skill in determining cooking times for various food items in order to complete all portions of the meal at the prescribed serving times.Knowledge Skills and Abilities/Management Preferences

The Knowledge Skills and Abilities (KSAs)/ Management Preferences are not required. Applicants who possess the following skills are preferred:
Working knowledge of methods of preparation and cooking of food in quantity portions
Proven ability to calculate amounts of food needed to supply the number of servings required
Proven knowledge with the standard tools methods and practices utilized to maintain food safety.
Proven experience with the uses and adaptabilities of various commercial kitchen equipment
Working knowledge of how to properly alter food and beverage consistencies.
Proven ability to perform simple math calculations and understand/follow oral and written instructions.
Proven ability to interpret and follow standard and medically prescribed recipes.
Valid Drivers License
Work Schedule: 5:00am - 2:00pm
