Job Summary

The Junior Sous Chef supports the Banquet Chef and Restaurant Chef in delivering exceptional luxury-driven culinary experiences across high-volume banquet operations and a la carte restaurant service. The Junior Sous Chef plays a key role in ensuring consistency quality and memorable guest experiences while operating at scale.

  • Culinary Operations & Luxury Execution

  • Support daily culinary operations for large-scale banquets events and restaurant service while maintaining luxury presentation and consistency.
  • Execute menus with precision refinement and attention to detail ensuring each dish reflects Fairmont brand standards.
  • Assist with menu execution prep planning and service flow for high-volume operations without compromising quality.
  • Uphold the philosophy that every guest interaction and plate served contributes to a memorable elevated experience.
  • Leadership Culture & Belonging

  • Supervise coach and mentor culinary colleagues fostering a positive and supportive kitchen culture.

  • Quality Safety & Brand Standards

  • Maintain strict adherence to food safety sanitation and health regulations.
  • Ensure proper food handling storage labeling and temperature control aligned with Fairmont standards.
  • Take pride in maintaining clean organized and efficient workspaces reflective of a luxury environment.
  • Planning Sustainability & Responsibility

  • Assist with ordering receiving and inventory control with a focus on cost awareness and waste reduction.
  • Support sustainable kitchen practices aligned with Fairmonts environmental commitments.
  • Execute production schedules and prep lists based on forecasted business levels and event requirements.
  • Communicate clearly and professionally with Banquet and Restaurant leadership to ensure seamless operations.
  • Other duties as assigned

Qualifications :

  • Minimum 5 years of professional culinary experience in large-volume banquet and restaurant operations.
  • Demonstrated experience working in luxury or upscale hospitality environments.
  • Proven ability to lead teams in high-pressure high-volume service periods.
  • Strong understanding of food safety regulations quality assurance and operational standards.
  • Strong culinary foundations with refined execution
  • High-volume banquet and restaurant service expertise
  • Leadership rooted in respect accountability and professionalism
  • Attention to detail and commitment to luxury presentation

Working Conditions

  • Ability to work flexible schedules including early mornings evenings weekends and holidays.
  • Physically demanding role requiring prolonged standing and lifting of kitchen equipment or supplies.
