What you will be doing:
- Assist in leading mentoring and training the Culinary Operations team
- Supervise and delegate duties; ensure brand standards are maintained
- Liaise with food and beverage front of house banquets sales and catering to ensure the highest standard of food quality and service is met
- Ensure kitchen is prepared for daily operations with on-going communication with team and relevant departments
- Assist staff with closing procedures when necessary
- Update communication log book with daily results and happenings
- Assist with monthly forecasts weekly schedules communication meetings and month end comments for the department
- Implement and develop promotional service oriented and revenue generating programs
- Ensure a safe working environment for all staff
- Ensure a complete understanding of health and safety regulations fire regulations and evacuation procedures
- Ensure all equipment is in good working order and all maintenance issues are addressed
- Motivate staff to contribute to the overall success of the department
- Encourage teamwork and professionalism throughout the department
- Implement relevant staff and guest suggestions
- Ensure the smooth and efficient operation of the dining room
Qualifications :
- Minimum 3 years cooking experience including experience in a fine dining restaurant an asset
- Red Seal Certificate (Journeymans papers) or Recognized International Equivalent or working to obtain
- Valid City of Toronto Food Handler Certificate required
- Previous supervisory experience an asset
- Excellent interpersonal and communication skills
- Aspires to become an Executive Chef with Fairmont Hotels and Resorts
- Must be innovative detail oriented and quality conscious
Additional Information :
- The Ontario base salary range for this position is $65000 - $80000. Our salary ranges are determined by job and level. Within the range individual compensation is determined by job-related skills and knowledge relevant experience and/or work location.
